I love hearts. To me, they are the choice piece...other than the fillet mignon. Take a heart form a deer in good condition, you have a nice clean muscle. Slice it open along one side and clean it out completely, washing out all blood and clots as well as removing any tough valve tissue inside and outside along the top Cut into small bite sized pieces. Sprinkle with a little bit of EVOO (extra virgin olive oil) and a top grade balsamic vinegar. Add some seasoned salt and whatever other seasonings you wish to try. Place it over a medium heat in a skillet and stir frequently until done. Personally, I put the entire heart on a plate and make a meal out of it alone. Just a side glass of ice water. Eat up and get a full belly. Jim says some folks will get diahrhea if they eat to much of it in one sitting, but I have never had that problem...I have an iron stomach to say the least. It does NOT taste like chicken. It has a taste and smell unlike any other meat. In MY opinion, it smells and tastes delicious. I only regret that I cannot hav eit more often. I always eat it on the second or third day after taking the deer. I wash it and clean it thoroughly, and keep it in a ziplock baggie in the fridge and let it cool out well before endulging the carnivore in me! ;D

Glad you like it. I don't know if I could get past the look of it. ;D I heard almost the exact same response from Thywar! LOL!! The ONLY food I will not eat is coconut (dathly allergic) and split pea soup my step mom makes (PUKE! ). Otherwise, it's fair game. I have found having an open pallet has really given me a great appreciation for foods that most people would either never think of or turn away from. Gues who won't be starving any time soon! ;D ;D ;D

I will try your cooking method next time, I generally cut them length wise, roll them in flour, salt and pepper and fry 'em! Jimmy

Jimmy, when I butcher my chickens, ducks, turkey, and any other birds, I make packs just of hearts and love them battered and deep fried. Very good!! I have never tried larger hearts battered and fried...I am always in a hurry for it to be ready to eat...but I will give it a try. Deer season is not over. I still have a week on firearms antlerless only and then comes muzzleloader season, so hopefully I will get another deer or 2 at least. Not to mention I will have plenty of beef and pork heart come spring! I will definitely give it a try on them! Sounds yummy to me!!
I love sheep heart, but have yet to get to try goat heart. I will have to find me a butcher goat now! ;D

In college I used to regularly buy and cook kidneys and livers from whatever was available in the store. My roommates couldn't handle the smells or the appearance. I have always loved chicken hearts & gizzards. Usually I boil them and add veggies to make soup.

I am sorry but puke, puke, puke!!!!! I just cannot get past the smell of organ meat. Of course I am a vegetarian so that might be part of the problem also. I know that ifi push came to shove I would probably get it down as opposed to starving. Thank God I have never been in a situation where I was anywhere close to starving but we never know what may happen someday. It is amazing what might become delectable if we face a time of truly hard times. But since I am not at that point I will pass on these foods and I am sorry but it does look gross.
