So does the handle have to be pinned? Also is it dueable enough to shape my finger guard out of?

In my opinion - knife handles must be glued and pinned, especially on scale (slab) type handles. I did a test quite some time ago attaching scales to a knife without pinning. I used several types of adhesive. All of the epoxies - without exception popped right of just by dropping the blade on a concrete floor. The other types of adhesive didn't do all that much better.
Adhesives give a good bond with the steel, but any lateral pressure will cause a failure. Pins prevent lateral movement.

Not saying it can't be done, but a micarta hand like you want is not going to be easy. A nice compromise that I have used is that found on micarta handled Randall knives. Can't recall the proper term for it at the moment though. Mitered style maybe. Crash may remember. But it is a good strong handle, though I would stl pin it.
