Ok, so my wife made me a grilled cheese sandwich for dinner in the new cast pan. It tasted really good. Unusually good. Much better than normal. To be sure it's not just in my head, we're going to do a blind taste test in a few days. One grilled cheese cooked in the stainless, the other from the cast pan. I'll let you know.
Anyhow, the pan cleaned up real easy with one paper towel. I'm happy so far.

Once you get the pan properly seasoned, a frying egg will slide across the surface easier than on a brand new teflon pan. My habit is to wipe the pan out immediately. As soon as I take the food out of the CI pan, while the pan is still hot, I wipe it out with a paper towel. Occasionally I use a damp cotton wash cloth; but, I do it while the pan is still hot. ENJOY! Happy CI cooking!

You will find that you and the pans will get better with use. No you did not make a mistake. I have one covered skillet that is my dedicated chicken fryer and corn bread fixed in one is top...

The only bad thing I've ever heard about a cast iron pan is that CowgirlUp somehow managed to break one. Now that took some special doing!

I just got a new cast iron fry pan and a set of wrought iron cooking implements a few weeks ago, so nice to cook on I tell ya what. I will be using it for camping etc whenever I can. At home we have a porcelain stove top these days, not so good for the cast iron. a dutch oven is next on my wants list and a corn boiler or coffee pot with a bail handle.

I like to do buttermilk or sour dough and stews in the dutch oven, don't do much with the others. There were quite a few recipes on the site we don't remember the name of and I know I printed them to pdf, so when I find them I will post.
In fact I think I did a snap shot to pdf of all of the food section not more than a couple of months ago.
Now I got my curiosity up and will have to search my files.

Alright, thanks guys. I'm feeling much better about our purchase after reading your replies. Good, I know what that stuff costs and it was not a purchase to take lightly! New Lodge stuff is high$$$ But hey you get what you pay for and you bought good stuff. It's actually fairly reasonable if you buy it in their factory outlet in S. Pittsburg TN.

You will love cast iron, it takes a little while to get used to if you haven't used cast too much. All the above mentioned the great points.

My Marine will inherit the one that was almost stamped with his noggin. I haven't decided who gets the others yet, or the Dutch oven, but it'll be whoever cooks the most -- probably the Marine.
