The list of things yet to learn is an endless list.

That identifies my position precisely .....I strive to learn continuously - which reveals how much I don't know.
But that's OK because I'm gaining ground!

Never underestimate what you know. But to find out you have to practice/use the knowledge.
Look at the generally accepted skills sets for use after shtf. Take each one and think about everything you can about that skill. Write all of you thoughts down. Next look up the skill set on the intranet, almost all of them will have a 101 article out there. Google blacksmithing 101. Check the tools and task the 101 gives information on. match that info against your own list and update the list. Now in a safe manner see what you can simulate with what you have on hand. Don't try to make a forge just yet but see what you have that you could make one with. What fuel will you use, how can you make your fire hotter, what would you want to try and make?
Go through this exercise with several different skill sits. You'll find one or two you really would like to learn more about, or one you know more about and have more on hand then some other.
The thing is don't rule out you as a welder until you know more about welding.
don't try to learn everything about everything but learn all you can about 3 things you would like to be able to do
everyone knows more then they think about things.
know a lot about a few things and a little about a lot of things

Takes away some of that 'overwhelmness'.

555 plan for development of survival needs. This may help some sort out the subject or at least knock the confusion down to a dull roar. By the time you get to the 3rd 5, most will be overlapping somewhere with other parts of the 555 plan. The first set doesn't have much room for change, the second set can vary a little, and by the third set, each of the original 5 topics will have developed 25 topics. This will allow visualization for those overlapping subjects that are often not understood to be overlapping until you are into the middle of it. That is time and resources that could have otherwise kept you breathing. - Food; develop 5 topics

If you think you have reached a point where you are 100% comfortable with your knowledge, then you are probably pushing up daisies...
