Almond makes the cherry flavor "pop." Don't think vanilla would work, it would be drowned in the chocolate/cherry flavors. Lots of recipes call for almond extract in cherry pies, so there's an affinity I can't explain.

Hmm... we all love almonds in this house, but we don't like almond extract in anything such as marzipan. Airborne's favorite cherry pie is nothing but the can of filling (unless I pick the cherries and process them myself) spread atop my homemade crust. His mom used lard but with his doc's dietary restrictions, I use olive oil. I'm thinking maybe I could process a few almonds and get the same result as using the extract... but it's going to have to wait a bit because I won't even have this coming weekend to myself. I have a wedding (fellow teacher) on Saturday and enough humdrum chores to fill the rest of the day. Sunday's gone with the regular church schedule followed by lesson plans and other school stuff. The following weekend ought to work, though.

CWI I told you it was a shocker, you're living proof by falling over from a fainting heart. My mom did bake banana cakes and made icing from scratch with egg whites. Now that to me was to die for.

A prescription of a large bowl of properly made banana pudding will cure the problem. No banana pudding....... What is the world coming too.....

From your link. In his cookbook Salted, Mark Bitterman writes of this recipe: "Your first bite will expand the boundaries of sensation separating your mouth from the rest of your body, and you'll be feeling spiciness in the warmth of your hands and smokiness in the tingling of your toes. And by the third bite your mind will have moved on to peel the black backing off the edge of the universe, filling the unending space beyond with your pounding heart." Makes you want to run right out and make some doesn't it.

I forgot to say the recipe used for banana pudding includes cool whip in the pudding mix.

That is too funny! But it'll probably never happen unless it's the last thing on earth to eat. On second thought cwi just maybe if you add some bourbon to it I might give it a try.

This is the part I want to experience "Your mind will have moved on to peel the black backing off the edge of the universe, filling the unending space beyond with your pounding heart." Dude, where were you in the late 60's and early 70's.......? That was easy back then.
