Have some White Lily SR flour that has a "best if used by" date of June 29, 2011. It had been "vacuum" sealed with a food saver, stored inthe freezer for +-2 years and on the pantry shelf for the last year since I needed the freezer space. Baked biscuits with it this morning and they were fine.
Have 3 more bags and we're going to test them to see if this bag was an anomoly.
But, 3 years past the Use By date and the flour was fine stored as mentioned.

The best if used by date is something the FDA decided to put on all foods. It originally started with dairy products to keep people from drinking sour milk. Then because people have little common sense anymore people started demanding a date on all food products. Not that it is a bad idea but some things will last a lot longer than the date. Those dates are a nice planned obsolescence so more product can be sold.
