Well once again the long hot summer days are rolling in. Take advantage of them to dehydrate foods using the sun. Solar energy is free, doesn't heat up the home, dehydrated foods take up less space to carry or pack and you save your canning jars for other food items which can't be dehydrated. Many fruits and veggies are in abundance and the internet is loaded down with DIY recipes to help you along plus CCMaMa can do it in her sleep which makes her a great resource if you have a question from a pro to do dehydrating. Yesterday I bought roma tomatoes at a great price. I will slice them to make dried tomatoes which add flavor to so many wonderful dishes or sometimes I just like to snack on them, but jeez they're so expensive. Oh yea, my dehydrators are not idle I'm making beef jerky. One gallon bag will go in the freezer if we need to evacuate (candy for the road trip), the other gallon bag full for a special occasion around the corner. My only hope is that they don't get eaten ahead of time.
