I have some spagetti and acorn squash planted and plan on canning some. Can someone walk me through it I have all the equipment but never done it before I purchased the Bell canning book but it only shows freezing squash which struck me as weird. Please and Thank You!

Unless you pickle it, you need to use a pressure canner. If you want to pickle it, there are liots of different recipies. If you don't want it pickled, the you MUST use a pressure canner because the acidity level is to low in them and they will grow botumlism and that is very deadly. If you rpessure can them, You can make all kinds of stuff, adn then just use the pressure canner according to the directions in the handbook, or according to USDA guidlines.
I will see if I can find my recipies for pressure canning squash...its easy, but you MUST use caution when using a pressure canner!!

Dink- Thanks, I figured I would pressure can them guess I should have made that clear, I do have a pressure canner and I'm used to cooking with pressure cookers, love tose things they are quick and retain more vitamins and nutrients.
