I now have both the Instant pot 6 quart duo, and the electric power pressure cooker XL. Here's what I did today with them. Rainy Day=Busy morning❤️ Scored huge chicken thighs and leg portions for $.79 a pound so bought 8 pounds. I took the THE PRAIRIE HOMESTEAD COOKBOOK recipe for "Maple Glazed Pork Chops" And used it on 6 pounds of chicken thighs and legs that I de-skinned. It was really really tasty as I snuck a piece! These are packaged for freezing right now. These were in my oven as the two pressure cookers were already in use.
Then I took the last 2 pounds of the chicken and made "Chicken Merengo" (recipe from a friend of mine from 1978) for dinner tonight.
Then there is the 4 pound round steak roast and 1.5 lb sirloin tip roast that I made in the Instant Pot (rather than the oven) with the same cookbook 's recipe "Saturday Night Roast Beef".
Also made 3 pounds of ground round in the instant pot for use in chili and tacos! Still need to drain it and package it for freezer. I love rainy days! All of this (except for cooling to package) took less than 2 1/2 hours start to finish.
I can't live without these things. 😂😬🤣Luckily we are a solar powered house so we have electricity pretty for free...

Dang SG, you got it going on in the kitchen!! All those new fangled appliances just blend in so well with all that extra super duper solar power you're connected to. Good for you!
You know fall is near and lots of those appliances are popping up tenfold in the stores ona kinda PaPa Noel be around the corner 'case you haven't heard. Shoot, you can line them cooking apparatus two deep on your counter top and make some extra fixins to share with the family, friends and neighbors. Any of those put in dem glass canning jars make great gifts.
Glad to hear you're feeling better and keep on doing all that great cooking, canning and freezing. The jars and freezers are saying "feed me". LoL!
