I have some pole beans planted. It'll probably be a few weeks before there is any amount of beans. I've been thinking about stringing up some of the beans to dry and make leather britches. Any tips or thoughts on the process.

I have made the leather britches plenty of times. Like the above article says you really need to pour off the first batch of water or they will definitely be bitter. I usually boiled them for 2-3 minutes and then poured it out and started with fresh water. Ham hocks and onions sure make a difference, but then again I put them in pinto beans, peas, and most legumes. Enjoy Jim

thanks for the info fellas, I'm going to give leather britches a try. I'll be able to say pickens got so slim I had to eat my leather britches. Sure do sound good with ham hocks and onions.

I don't have ANY idea, what you all are talking about. Leather britches from Beans....? Or was I out in the heat too much today?

Works well, but don't let them dry on the vine too long, or they will turn brown.
This isn,,,,'t too bad as they still can be shelled and cooked.....just have a different taste than great nothern beaan.....the most common white dry bean.
