I have a friend who had an abundance of cukes, and I got all his extras. I planted mine late, so they are just getting to growing good, and I don't expect my own crop for a couple more weeks.
In the mean time my zucchini and okra have grown like crazy! So, I have been busy canning what I can. So far I have put away...
~40 pints sweet pickle slices ~40 pints sweet pickle slices ~22 pints dill pickle slices ~15 quarts dill pickle slices ~12 pints dill pickle bites ~24 pints dill zucchini bites ~12 quarts dill zucchini slices ~12 pints sweet zucchini slices ~8 pints zucchini relish ~8 pints cucumber sweet relish ~8 pints cucumber dill relish ~6 quarts bread & butter pickles ~12 pints bread & butter pickles ~8 pints pickled okra ~7 quarts pickled okra ~2 half gallon jars pickled okra (for a brother) ~6 half gallon jars pickled eggs ~2 half gallon jars pickled pigs feet
***and I am working up about 30# more of cucumbers and 30# more of zucchini...Planning: ~cucumbers and onions ~pickled beets (for Jim) ~pickled hog hocks ~pickled pigs feet ~kimchee ~sourkraut ...and whatever else I think sounds good...until I break out the pressure canner.
Sorry I haven't been around...I have been busy!

Holy Cow!!! You've been a busy little girl. You put Turmeric in your sweet pickles? Yes...Here is my recipe for sweet pickles... SWEET CUCUMBER PICKLE OR RELISH 2 c. lime 2 gal. water 10-12 lb. cucumbers 2 qt. vinegar 10 c. sugar 1 tbsp. salt 1 tbsp. celery seed 2 TBSP homemade pickling spice (list below) 2-3 Drops of green coloring Soak cucumber chips in lime and water for 24 hours. Rinse the lime off and soak in clear water 3 hours. Rinse and soak 12 hours in the sugar and vinegar. Tie the spices in a cloth bag and place it with the soak also. Boil the cucumbers in this vinegar syrup and spice solution 45 minutes. Pack the hot pickle into hot jars and seal. If you want to make relish split the cucumbers into fourths or eighths lengthwise. This makes the soaking the rinsing easier. Grind the cucumbers before the syrup soak and cooking steps. **Sometimes I do the soak with the spices in the pouch then release them during cooking and incliude them loose in the canning jars with the pickles for a stronger flavor. INGREDIENTS for homemade pickling spice: 2 TBS coriander seed 2 TBS black peppercorns 2 TBS mustard seed 1 TBS allspice berries 1 TBS ground mace 1 TBSP turmeric 1 TBSP whole cloves 1 tsp red chile pepper flakes 1 tsp ground ginger 2 small cinnamon sticks, crushed or broken into pieces 2 bay leaves, crumbled Mix all ingredients until well-blended and store in an airtight container in a cool dark place. Note: Ground spices tend to make brines a little cloudy. If this bothers you, only use the whole spices in the recipes. In the case of the ground ginger, use a small piece of ginger root in your recipe instead
