I had this link sent to me after a question I had about potatoes...I think there is quite a bit of info on here that is VERY valuable. The only thing I don't recalll seeing is a little tidbit about peppers. If you are going to dry peppers, you will want to rqaost them first and remove the blackened skin. Otherwise when you rehydrate them, the skin will be hard and rather nasty, unless you grind it into a powder. This is my experience with BELL PEPPERS...I am not sure how it affects other peppers.
