20-25# Roma tomatoes (ripe and firm) 1 sweet onion 1 red bell pepper 1 extra large jalapeno pepper cilantro salt red pepper flakes 1/2 cup lemon juice riope firm garden tomatoes, Roma works best for salsa Blanch in boiling water for 3 minutes, shock cool in ice cold water to stop cooking process Skin and drain tomatoes over a large bowl and save the juice, roast peppers until skin is blackened for easy removal Remove as much of the seeds from ther tomatoes as possible and crush them by hand clean, seed and finely dice jalapeno clean, seed and finely dice bell pepper...dice onion combine everything in a large pot and bring to a slow boil until done clean jars and fill to 1/4" from top & waterbath can for 15 minutes, let cool and label Strain tomato juice, add some salt and stick in fridge to chill and drink

Looks great and can almost taste it right now. Onliest thing I would do for mine is with 20-25 # maters, put bout 4 or 5 jalapenos in it. ;D Roma tomatoes make the best salsa and also very tasty pico de gallo. Jim

I like mine with more jalapeno in it...but I didn't make this batch for me. The jalapeno I used was HUGE!! Otherwise I would have used 3-4 regular ones. I like to make homemade tortilla chips for dipping or use the salsa on an omlett (covers the egg taste!).
