Okay as winter closes in I still would like to cook with my Ducth Oven outdoors. because of different locations I'll be at a hole dug won't get it. Heres my idea, I 'm thinking of buying a new 10 gallon galvanized garbage can, put a small rack just off the bottom for charcoal and to sit the dutch oven on then i can put charcoal on the top of the dutch oven, and cover all with garbage can lid. This sounds good to me but one concern comes up will the galvanized gabage can create any problems of toxicity to the food? My thoughts are no because the dutch oven would be closed. Anyone knowlegable on that?

I don't know about any toxicity issues but it sounds like a darn good idea. Might need to put a few small holes in the side or bottom for air flow?

There was an episode on TV from a local outdoors show that covered just that. Each week they cover hunting and fishing around "The Natural State" and always have a cooking segment at the last portion of the program. This episode cover doing what they called "Trash Can Turkey" and they actually did a whole oven baked Turkey just as you described. Let me get these two Rocking chairs finished for this order and I will see if I can find the segment or if they have it on the Youtube and I will pass it along. It looked really cool. And, they did eat it on the show and they are still around so I guess it didn't kill them or at least not right away!!

Well I tried to post pics without success. I purchased a steel 10 gallon garbage can. I layed 2 pizza pans in the bottom to prevent burning through the bottom of the can, they fit perfectly. I drilled 4 - 1" holes around the bottom perimeter to allow air in around the charcoal, I also drilled 4-1" holes along the sides of the upper perimeter just below where the lid is these will allow exaust. I'm using a Lodge #12 dutch oven which fits perfect in the bottom of the can. anyways looking forward to making some cobbler this weekend and cooking outside during the winter without substantial heat loss.

I don't remember at what temp galvanized starts ta gas off at, but I beleive it was higher en what yall gonna get with coals.
Fer a bit a added insurance, ya could lay some fire brick in the bottom where yall gonna put the coals, plus make it last longer to. Besure an clean out all the ash each time cause ifin it gets wet it'll rust it out perty quick.
I use a galvanized ash pan in my drum smoker an never have any problems with that, cept that over time it does start ta rust from the ash.
