I scored about 10 lbs of beets for $2! Ok but no one can eat that many in a few days and I wanted to have roasted not pickled beets. What to do?
Well, it turns out you can roast, peel (with gloves on of course), cool, chop into appropriate sizes and freeze these beets.
So now, in winter, I will have the effortless meal of soft goat cheese, arugula leaves, balsamic vinegar and beets!!!!
Ok, that made me hungry:)
