Ok...I won a bid on E-bay for a #22 Game Winner manual grinder. The question is....How many of you use beef fat in making your deer burger and if you do use beef fat...what's your ratio? 1# fat to 10# deer?

I do not like much fat sometimes I use none at all but that is me yeah it should work

I always put beef fat in my ground venison. I add about 15%-20%. Venison has virtually no fat in it so if you grind it into burger meat there is nothing to hold it together when cooked. Your burgers or meat loaf or whatever will just crumble apart without the fat. I just go to the local butcher shop and buy it by the pound and keep it in my freezer.
As a sidenote, I always keep some out for the songbirds in the winter, they really need the protein that time of year.

Because most of my ground deer meat will be used for sausage not burgers, and most of that sausage will be used to make burritoes. I use pork fat not beef at a 7-10% mix

I do not add beef fat. I prefer to keep the trimmings from the deer, there is some tallow on them, and just grind it up with the burger, making a very lean meat.
When I cook it, I generally add some EVOO (extra virgin olive oil) to the burger for fat content if its needed, or mix it half and half with beef burger...but I do my own beef as well and it is very lean, so there is no real fat to be had in it.
I just prefer having a leaner meat. Keeps the greasy feel out of the mouth and the less grease, the less apt you are to get gas, stomach upset and such.
Duckie, for meat loaves and such, I add a little fine bread crumbs, an egg or 2, some steak sauce and seasonings...they hold together very well, have a very nice flavor and are juicy, yet firm enough they can be sliced and served on bread for sandwiches! Try it some time!! Good stuff!!!

Buying beef fat around here means paying at least $2/lb. Once upon a time I used to buy it both for the birds and for making soap.

We used bacon in the mix with the deer meat. I don't recall the ratio though. It was delicious on the barbeque !!

1 to 10 on the beef fat. I had some that had bacon in it a few weeks ago, and it was good I cant remember how he did it. But I have been asking around trying to find out how he did it.

I don't mind going 0 beef fat or any fat for that matter...but the wife likes it that way so...I know where my bread is buttered...Seems that the average is about .7 to 1.0 pounds of fat to the 10 pounds of deer...this gives me something to go on. I'll let yall know how it turns out.

LOL....my ex BIL tried that with some sausage he had processed from a 250#+ boar!!! I happened to walk into his house the same evening my sister was "attempting" to cook it...needless to say...she had all the windows up, every ceiling fan running and it was about 40* outside....you tell me why she had all that going on with 40* temps outside...LOL
