I have never seen a reputable recipe for home canning cooked rice, and the USDA and various state home extension services don't cover this topic specifically. In general, not being able to find recipes from authoritative sources means it's probably not safe to can. What I have found are several comments indicating that the density of cooked rice and the fact that rice is particularly susceptible to the growth of botulism make such a practice unsafe. I also found a suggestion to cook rice, dehydrate it, and store it to be used as instant rice. Or freeze it. Neither of these methods would be conducive to the growth of C. botulinus. I will continue to research "canning cooked rice" to see if I can find any further information, and I would appreciate any good solid links anyone else can find, and I'm amending the guidelines for posting canning recipes, so check the rules before you post.
