My younger brother has been noshing on and gathering plenty of crab apples from a tree up the hill from where we live as apparently they have enough of a desirable taste to be a good food as far as he's concerned.
Anybody have a particular method for processing and preserving them? The Ball Blue Book has nothing on them.

I made jelly out of them one time. They seem to need more sugar than regular apples.

my mother used to make crab apple pies, very tart but excellent with icecream

My mom used to can them just like regular apples and always added a clove to the jar . Excellent pies and perfect as a garnish with smoked ham .
