Looking to try making some Pemmican, please share your recipes and experience. Thanks! Also to clarify when rendering fat, is the actual tallow the yellow more liquidy that is on the bottom of a jar or is it the white head that sits on top of the yellow?

Still confused on the tallow question, the article doesn't specify the white top or the yellow lower to be used.

Made a small trial batch, for hiking while in Kentucky turned out decent kept small amount for quite a while to see longevity, kept well
