Pop Rouge Ice Cream with Blackberry Dumplings Recipe By Melissa Martin on June 28, 2016
When New Orleans chef Melissa Martin’s late uncle Sam Lirette sold this ice cream at the “Lagniappe on the Bayou” festival in Chauvin, Louisiana, his booth’s sign touted “Lá Creme á Sam.” The key ingredient, Pop Rouge soda, no longer exists, so Martin swaps in Swamp Pop’s new version, then tops the frozen treat with blackberry dumplings.
Makes about 1 gallon 2 cans (14 ounces each) sweetened condensed milk 14 ounces water (use sweetened condensed milk can to measure) 3 cans (12 ounces each) evaporated milk 3 bottles (12 ounces each) strawberry cream soda, such as Swamp Pop’s Ponchatoula Pop Rouge* 1 tablespoon vanilla extract Pinch of salt Blackberry Dumplings (recipe below)
In a large bowl, whisk together all ingredients. Transfer mixture to an ice-cream maker and process according to manufacturer’s instructions. Serve with Blackberry Dumplings.

I'd be pouring heavy cream over the ice cream, letting it harden, and then eating it.

Oh my goodness what a ghost of good times from my past woodydz. How on earth did you manage to find this recipe? Lagniappe was a mere five minutes walk from my house. Still have beer mugs I use. Past many a good time at Lagniappe and have great memories. Chairman "Sou" Lirette is my uncle by marriage and is still living. Alas, many of the Cajun Master Chefs are now cooking their finest up above. The church still has cookbooks for sale of the many Cajun classic foods cooked. Towards the end of the video they briefly show Sam Lirette setting up an ice cream maker. The whole fair represented our culture, the food, duck carving, bread making, blackberry dumplings, cypress doll carvings, pine needle basket making, quilt making, pirogue making, etc. Yes we all still miss Lagniappe on the Bayou. youtu.be/sxW-19-E69c

I found it in a farm mag That Woman, Melissa Martin, who is at the top has opened a new Cafe and everything she does is old style recipes I guess. I remember them all so well although Melissa was still very young when the fair ended. You stumbled upon what I consider a classic ice cream. Pop Rouge is no longer sold but they do sell others which are comparable to the flavor. Thanks for taking me down memory lane!
