Grilled Salmon and Avocado Salad

Ingredients
For the dressing
• 2 limes, juiced
• 3 tablespoons olive oil
• 1 hot pepper, seeded and diced
• 1 teaspoon cumin
• 2 tablespoons cilantro, finely chopped
• Salt, to taste
For the salmon
• 2 pounds salmon, cut into 4 pieces
• 1 tablespoon olive oil
• 1 teaspoon salt
• 1 teaspoon ground coriander
• 1 teaspoon ground cumin
• 1 teaspoon paprika
• 1 teaspoon onion powder
• 1 teaspoon freshly ground black pepper
For the salad
• 8 cups lettuce
• 1 large avocado, pitted, peeled, and sliced
• 1/4 red onion, finely sliced
• 1/2 cucumber, sliced
• Sliced cherry tomatoes
• Cilantro leaves
Directions
For the dressing
Combine all the ingredients for the dressing in a jar. Seal it and shake until well mixed.
For the salmon
Combine the salt, coriander, cumin, paprika, onion powder, and black pepper together.
Rub the salmon filets with olive oil and then with the spice mix.
Heat the grill until hot. Grill the salmon to desired doneness, about 8 minutes.
For the salad
Place the lettuce in a salad bowl. Add the avocado, red onion, cucumber, cherry tomatoes, and cilantro leaves. Place the grilled salmon on top. Drizzle the cilantro-lime dressing over the salad, and serve immediately.
Since the twins won't even try fish of any kind I also grilled some chicken with "PATTIES" Rub
Coat the chicken with a thin layer of mayonnaise, add the rub. The mayo holds the rub on, prevents sticking on the grill and insures very juicy chicken without any mayo taste after grilling.

Now if I could figure out how to get their "sawdust pies" here I would be set. Ask and you shall receive.
Try Patti’s Famous Sawdust Pie at Home
Ingredients:
7 egg Whites, unbeaten
1 1/2 cups granulated sugar
1 1/2 cups graham cracker crumbs
1 1/2 cups pecan
1 1/2 cups coconut
9-inch unbaked pie shell
Directions:
Mix all ingredients together and stir by hand. Pour into unbaked pie shell. Bake in preheated 325degree oven until glossy and set(about 25 to 30 minutes).
DO NOT OVER BAKE!
Serve warm with sliced bananas and whipped cream. Serves 8. Enjoy!

We used to go in groups and everyone would get a different dessert then we could all of some of each. All are great.
