FRIEND/NEIGHBOR went Swordfishing and brought me 10 fresh steaks about 1 1/2" to 2" thick and a bucket of jumbo shrimp which I AM GRILLING with egg plant and onion right now
I prefer to Pan-Sear SWORDFISH when I get pieces but these were nice and thick steaks and I am cooking/grilling them whole
just olive oil/ sea salt/and black pepper
cook them just 3 min per side on high heat then another 2 min each side on med heat
don't over cook it or it will get tough
since I had the hot coals I also grilled a batch (15 or 20) country style ribs for tomorrow
All ready ate the swordfish
Wife kept bringing stuff out so I ended up grilling 5 swordfish steaks the ribs with rib rub and 20 or so chicken quarters I'll put hickory and honey BBQ sauce on after they are done

Good for you Woodyz, I've never eaten swordfish but I really like the flavor of grilled fish so I imagine it tasted great thanks to your generous neighbor. Great neighbors are a big plus. My neighbor is keeping up my yard for now till I get another mower. In return he gets twelve packs of his favorite brew pop and homemade beef jerky. Everybody is happy!

Oh CL next time you get to go to a soirée in NOLA order swordfish. It’s good. Z man you grill some of (and a lot of it) best sounding food ever.

can be a little strong tasting and a little tough when compared to other white fish but both are issues caused by overcooking
people just want to cook most fish too long

we make our own charcoal so I never buy any
made some just the other night, not because we needed some, but because we had some wood scraps to get rid of
have a good 1/2 a 55 gallon barrel made, so don't need any

woodyz when you say "wood scraps", are you referring to tree branches or building materials? Isn't it "taboo" to use treated lumber to make charcoal because of the chemicals used as preservatives in the lumber?
