I have my dry foods like rice, pinto/black/kidney/Lima beans, lentils, split peas in 1 gallon Mylar bags with O2 absorbers. I opened up a couple of older bags to verify quality and taste. Quality was great but I was quickly reminded to stock more seasonings! So, I opened up a 1lb. can of ham and added chunks of it. It's too salty for me to eat that particular ham by itself, but it was just perfect for adding flavor!
Depending on your personal taste and/or need for salt, the 1 lb. can is enough for a whole lot of rice and beans. The ham the I stocked a lot of, was chosen for it's long shelf life and very low cost. It was $ 2.60/can a couple of years ago but now it's $ 3.88 at Walmart. The last four that I bought were are marked with August 2028 best by dates.
Taste and texture are several steps above Spam. I crispy fried some of it and it could pass as an emergency substitute for bacon. The ingredients are just ham, water and a ton of preservatives. Certainly not a health food, but definitely has a place in my preps and I will add more.

I took some of my "older" preps on a camping trip. I made one of the group meals using rice that I had stored in a two liter soda bottle (no O2 absorber). They guys eating the food gave it a big thumbs up, with the rice stealing the show. When I told them the rice that was in the dish was twelve years old (and how I had stored it) they said that they needed to "up" their preps. One guy asked if I had been using up all of my older preps. I told him - Nah, just wanted to see if they were still good and you guys were my test subjects.

I am continuously amazed at how long some foods can be stored under good conditions! This is a great example.
