If you're in a situation where refrigeration isn't available or won't be available for a long time, I know for myself, having mayonnaise does make a difference for sandwiches or to make certain dishes.

Too, since this recipe and other recipes call for using raw egg, to be on the safe side you need to know how to pasteurize the egg. Again, the provided link takes you to the process of doing this. It's actually elementary to do this.
