POOR MANS POTATO SOUP
Ingredients -------------------------------------------------------------------------------- 4 large potatoes, peeled and cubed into bite size pieces 1 cup milk 1 small onion, coarsely chopped 1 tbsp. galic salt powder 1/2 tsp. salt 1/2 tsp. pepper 1-2 egg(s) (in shell)
Place potatoes and egg(s) in large pot of boiling water, enough to more than cover potatoes. Add garlic, salt, pepper, and onion. Boil until potatoes are just tender enough for a fork to pierce. Drain about 1/4 - 1/2 of water, depending on how much you have left. Remove boiled egg(s). Set aside. Peel egg, dice and add back into the soup. Add milk, stir, and season if necessary.

Any ya'll like the chili that they serve at the Wendy's hamburger joint?
Here's the recipe:

Title: Wendy's Chili Categories: Yield: 12 servings
2 lb ground beef 1 29 oz can tomato sauce 1 29 oz can Kidney beans 1 29 oz can Pinto Beans 1 c diced onion - one medium 1/2 c diced green chili - about 2- 3 1/4 c diced celery - 1 stalk 3 med tomatoes or one 29 oz can pe tite diced 2 t Cumin powder 3 tbs Chili powder 1 1/2 t Black Pepper - 30-40 pepper mill twists 2 t Salt - I OMITED THIS AND\ 2 c Water
1. Brown Ground beef in skillet over medium heat, drain. I just browned it in the Dutch Oven - one pot dish!
2. Crumble ground beef into pea size pieces
3. In Dutch Oven combine all the ingredients. Bring to a simmer over low heat. Cook, stirring every 15 minutes, for 2-3 hours. Rating: Source: Tod Wilbur, Top Secret Recipes

Mr.Mikes Wicked Good Corn Chowder Yummy, thick and hearty corn chowder that feeds our family at least twice if not more. I only have 2 big burners on my stove so my recipe takes some time. If you have the space to do more at once go for it! 1 lb Ground meat (sweet sausage, hamburg, deer burger, or what have you) 1/2 to 1 lb Bacon (or pork scraps) 1 and 1/2 Family size bags of corn 1 can Cream corn 6-8 Medium potatoes 1 Qt 1/2 and 1/2 1/2 - 1 lb Cream cheese 1 Huge onion (or a couple medium ones) 1/2 stick Butter 5 Cloves Garlic 1 Gal Whole Milk Salt Pepper Sage Basil 1. Put the 1/2 and 1/2, 1/2 gallon of milk, cream cheese and half the butter in a large pot on low to medium low. Stir occasionally to prevent scalding. 2. Fry the bacon fairly crispy, pour off most of the drippings into your bacon grease can (as any good prepper would), then brown your ground meat. While you are cooking your meats chop up your onion and mince your garlic. Add cooked meat and bacon to the pot. 3. Toss the garlic into the hot fatty pan you used to cook your meat cook until you can smell the garlic (don't brown), then add your onion. Sweat the onion until soft then add to the pot. 4. Peal and chunk up potatoes to desired size, boil in a pot till just tender, then add to the pot. NOTE: If you are making your chowder in the morning for tonights dinner you can simply simmer the potatoes in the chowder and avoid pre-cooking. 5. If thawed add the corn and creamed corn. If frozen I like to pre-cook it a little so it doesn't dump the temperature of the pot. 6. Use the remaining Milk to top off the pot. 7. Add spices to taste Bring to a simmer and let cook. Once its simmering you can eat it but the longer this sits the better it tastes. Watch for scalding. You could easily do this in a crock pot too, cook on high till hot then turn to low and let it sit all day... ooohhhh yummy!! If your chowder is thin take the remaining butter and some flour and make a roux to thicken it up. As with any recipe add your own flair. This goes great with some homemade bread and butter and is the perfect thing to come home to after a long cold day of splitting wood or hunting.
