Peanut Butter Balls 1/3 C peanut butter (I like crunchy, but smooth ill do) 1/2 C dry milk powder 2 Tbl wheat germ 1 Tbl honey Mix it all tagether an make inta bite size balls. Only thing bein ya gotta keep em in the icebox if ya don’t eat em all in a day er so! Course, that usually ain’t a problem!
Great on the trail.

Salsa Cheese Chips
Cookie sheet full of large corn chips or scoops top each with homemade salsa, shredded cheese of choice, and sliced jalapeño place under broiler till cheese melts

Biscuit Mix
Just like that big yellow box stuff, only way cheaper. Use any recipe that works with that.
Combine in a large bowl: 8 1/2 C. all-purpose flour* 1 tsp baking soda 3 Tbsp baking powder 1 Tbsp salt 2 tsp cream of tartar** 1 1/2 cups instant milk powder then cut in until it looks right: 2 1/4 C. vegetable shortening
Store this mix in a ziplock bag in the freezer for long term storage, or in a plastic storage container on the shelf, or in a clean coffee can. Makes 13 cups. If you want whole wheat, substitute up to half the flour for whole wheat flour. *Use 9 C. flour if you are over 6K feet altitude. **I have had to make this without cream of tartar before and couldn't tell the difference. Use this in any recipe that calls for Bisquick.

Pancake Mix
Combine in a large bowl: 10 C. all-purpose flour 2 1/2 C. instant milk powder 1/2 C. sugar 1/4 C. baking powder 2 Tbsp salt
Store this mix in a ziplock bag in the freezer for long term storage, or in a plastic storage container on the shelf, or in a clean coffee can. Makes 13 cups.
To make pancakes:
Beat together: 1 1/2 C. pancake mix 1 beaten egg 1 C. water 3 Tbsp oil
Let stand 5 minutes to thicken, then cook like you usually do. Makes about 10 four inch pancakes.
To make onion rings: Make batter using ice water, dust onion rings with flour, then dip in batter and fry in deep hot oil until golden brown. Also good with zucchini sticks, mushrooms, etc. The flouring makes the batter stick.

Whole Wheat Mix
Combine in a large bowl: 6 C. whole wheat flour 3 C. all-purpose flour 1 1/2 C. instant milk powder 1 Tbsp salt 1 C. sugar 1/2 C. wheat germ 1/4 C. baking powder then cut in until it looks right: 2 C. vegetable shortening
Store this mix in a ziplock bag in the freezer for long term storage, or in a plastic storage container on the shelf, or in a clean coffee can. Makes 14 cups.
To make muffins:
preheat oven to 400 degrees and grease muffin tin, or use muffin papers
mix together: 3 C. whole wheat mix 2 Tbsp sugar beat together separately: 1 egg 1 C. water and stir the liquids into the drys all at once, mix quickly only until all ingredients blended, fill muffin cups 2/3 full and bake for about 17 minutes. Makes one dozen.
Whole wheat pancakes:
beat together 1 1/2 C. water 1 egg and add all at once 2 1/4 C. Whole Wheat Mix stir just until moistened and bake on a griddle as usual. Makes about 15 four inch pancakes.
to make waffles: Beat together 2 1/4 C. Whole Wheat Mix 1 1/3 C. water 3 Tbsp oil 3 egg yolks Now beat the 3 egg whites until stiff and fold into the batter. Bake as usual. Makes 3 or 4 large waffles.
Whole Wheat Quick Bread
This stuff is divine. Preheat oven to 350 and grease a loaf pan. Beat together 1 egg 1 1/4 C. water and stir in just until moistened 4 C. Whole Wheat Mix Place in loaf pan and if desired, sprinkle about 1 heaping Tbsp sugar over the batter. Bake for about 50 minutes, testing for doneness with a toothpick. Better let it cool before you slice it. One 9" x 5" loaf.
