Wacked a doe over the weekend with my Crossbow. WoodsCustom-REVOLUTIONS was in charge of tracking. Tonight, I'm prepping the meat for Canning. Canning tomorrow night. Makes a person feel good about themselves. WC Note: WCR2's rifle....Ruger Takedown 10-22

Awesome and congrats on the harvest!!! What's your method of canning? How long do you let if go and at what pressure?

Awesome and congrats on the harvest!!! What's your method of canning? How long do you let if go and at what pressure? I had a real good tutorial on the site in wich we do not speak of. But, in a nutt shell. 1. Trim all fat & Tendon from the meat and cut into 1" Cubes. 2. Get your Jars Ready. Sterilized and inspected. Lids and rings too. 3. Install one Beef Bulion Cube in the bottom of the jar 4. Cold Pack the meat with 1" Headspace. 5. Wipe Jar rim, install lid and ring, hand tighten, but not REAL tight. 6. Put Jars in Pressure Canner and prep according to directions. 7. Run 10 PSI (Up to 800 Feet Altitude) for 90 Minutes. 8. Depressureize according to directions. 9. Remove and clean Jars. 10. Set jars on a towel and listen for them to seal. You're Done. WC

Good job. Your off and running...how many more to go? I have been seeing a bunch of does every after noon but have held off with the hope of when they hit rut, the lill darlins will lure me in a few nice buck.

If the winds of fate treat me well, I will get to go during rifle season on leave up in Franklin Co. ;D You making me miss home bad WC! Nice doe and a fine looking young man you got there too. Both something to be proud of.
