Some of the best jerky I make is exactly that, nothing more than salt and course ground pepper. I like that better than any other recipe and I have tried all sorts of spices and marianades.

I had a man bring me two deer once and asked me to take one deer for myself and make jerky out the the other whole deer for him! I happily obliged the man!

If I understand you correctly blacksmith, you want to rehydrate the jerky through the cooking process, not eating it dry? If so, I have never tried that. I would share my jerky recipe with you but I never measure any ingredients or the time I smoke it etc., it's kinda like how I cook anything, don't ask me how i did it but it usually turns out darn good

Sure makes me wish that the lads and I could come down to the Wtrfwlr School and get turned into proper Jerks ourselves! The TG break from school just isn't enough time, though.
