We got some cheese at the farm when we went for the wild foods walk. We bought some and MountainMark gifted some to us.
So I decided to throw together some Mac n Cheese. It came out perfect.
Since I don't measure when I'm experimenting this is all approximate. And without the same type of cheese it wouldn't come out exact but I thought I'd
post what I came up with in case someone else want to use my recipie as a starting point for their own creation.
Half a box of farfelle pasta
3 tbs goat cheese
1 TBSP flour
4 tbs butter
1/2 cup of cream
3 slices of American cheese ( the real stuff)
1/2 cup grated Toma (MM"S) which is a white smokey type of cheese
1 cup grated Swaledale (MM's) which is sort of like a very sharp cheddar
1 cup grated Gruyere (MM's)
1 to 2 tsp of Penzey's Fox Point seasoning which is sort of like the seasoning in ranch dressing.
Dash of garlic powder and a couple of dashes of salt
Panko crumbs
Cook the pasta. Melt the butter in a sauce pan and add 1 TBSP flour to make a light roux. add the goat cheese and remove from heat while it softens. ( I was using this time to grate the cheese.) add the cream, seasonings and heat and stir until blended and set aside. Put half the pasta in a baking dish and add about half of the grated cheeses. Add the rest of the pasta and the rest of the cheese. If there is not enough cheese to cover the pasta at a half inch depth then grate more and add it. Pour the cream mixture over the top and spread it around with a spoon so all the cheese and pasta is covered. Add panko crumbs and dot with small bits of butter. Bake @ 350 for half an hour ur until top is crunchy and the cheese is bubbling up.
