Oh man I am beat, just spent the last hour butchering a big dang deer. Must have been 300 lbs. Got hit on the highway less than a half a mile from the house right in front of my son. Highway patrol said we could butcher him. Six point in velvet, but backstrap bigger than my calf and as long as my leg. I took pictures I will post tomorrow.

Pictures Big heavy deer, very big body, older deer, broke neck, shoulder and lung and heart tore up by ribs, he was a mess inside. Look how big his head is Would have grown to a decent rack. Big deer = big heart

That is a big Deer.. Glad you got the remains though and were able to use the meat. Too many times they won't let someone take benefit from something like that.. and that is a big deer..

He was still warm, most of the blood in his body cavity wasn't even clotted yet. There are so many deer impacts around here the police will usually let someone have it if they no it is fresh, I think sometimes they have to worry about the liability if people would eat a deer that was dead too long. He has been in the soybeans to the West of us and had fat chunks the size of my hand inside, fat between his skin and meat, very healthy. If my son hadn't witnessed him hit and if he had not been still warm I wouldn't have butchered him.
We have one we have seen just behind us that is bigger than him, no one has had a shot at him the last two years. This one was not him, and as far as I know had not been seen before. I was glad to get the meat I was down to one last package of deer steaks from last year.
I have been thinking I would get a 1/2 hog for July 4th, now I think I will just do one of his hams and a pork ham I have left instead.

Good deal for everyone, that is except the deer Did you butcher that deer all by yourself? Yea t took about an hour. My son would hold him from turning but I gutted, skinned and 1/4 him. An it flat wore me out all day yesterday.

He has been cooling out on ice the last two days, now I'll cut him up some, make steaks from one ham, cut one back strap for frying. I'll trip up the shoulders and use the trimmings for stew cubes, but BBQ/smoke the shoulders. The other backstrap I will just cut in half and use like a roast in the slow cooker. The other ham I'll just trip and we will either smoke it or cook it in a pit.
I cut stew meat from the ribs and neck. Sometimes we make a roast from the whole neck but his was broken up pretty badly from the car.
