Just did a search on the author. She's a native of Crowley, La. and died a little over a year ago at the age of 93. Just maybe butter was her preference or butter is used in Creole cooking which is what she published recipes of in her cookbooks. Me, myself and I be Cajun sha, two different color books when we cook, Cajuns use oil du cuchon, oil du pistache, oil de maiyee, oil de canola. Cuchon is pig, pistache is peanut and maiyee is corn and if I spelled them all right, I did good.

Not true for one of my Grand Daughters, she will scoop butter out of the container and eat it by the spoonful if she could get away with it. Sugar too! Thin as a rail, with a metabolism of a tasmanian devil. Disposition of one too. Shes 10.
