My mom called it Caldo de. Not sure of spelling. I will give you a can verison and you can surely use fresh or home canned.
2 lbs of lean beef. round, sirloin Cubed into bite size 4 strips of bacon 2 cans diced tomatos 2 cans Rotel Tomatos (reg or hot to your taste) 5 med red potatos cut up in bite size cubes 1 LARGE yellow onion diced up 1 clove garlic diced salt and pepper to taste
optional 4-6 small ears of corn
Fry bacon in bottom of pot you plan to cook soup in. After about half done add onion, garlic and beef. Stir constantly untill beef mostly done. Add all tomatos. Let simmer for about 10 mins. Now add potatos. cover with enough water to cover contents. Cook with lid on a med simmer, stirring occassonly for about 2-3 hours or until beef is tender.
I like to serve with Mex cornbread.

Yummm I love Mex food... what time did you say you wanted me to bring the beer? (jalapenos in that cornbread? I hope)

Wonderful chilly (or chile) day meal. I was born and raised on the Mexican border (Del Rio, TX) and we had variations of that recipe regularly. We call it Caldo de res (or Sopa de res), and with the bacon Caldo de res y tocino. I will be right behind thywar and jalapenos in the cornbread-most definitely! Jim

Born and raised in El Paso. I was a regular trader at a young age. I traded my lunch money to all the Mexican kids/friends for their sack lunch with tamales, tacos and such... ;D Jimmy
