I did something like this at SC Retreat, but I am next to a good lake so I put PVC down deep where the water stays cold and circulate it through a buried deep freezer. It stays about 40 degrees in there. Not as much room but I don't have a cold spring on the place so I had to make due.
This article is a good example of how you can get by without a refrigerator off grid, while you may not be able to duplicate what is being done here you should study the technique so you understand how it is being done then adapt, improvise and overcome.
